Arugula, Burrata and Heirloom Tomato Salad with Fusion® Vintage Merlot Salt

Celebrate summer with this fresh salad filled with plump heirloom tomatoes, peppery arugula, and creamy burrata cheese.

Ingredients

For the salad

  • 3 cups fresh baby arugula
  • 3 heirloom tomatoes, sliced
  • 8 ounces burrata
  • ½ teaspoon Vintage Merlot Salt, or to taste
  • Fresh cracked black pepper, to taste
  • ½ cup fresh basil leaves, thinly sliced or julienned

For the vinaigrette

  • 2 tablespoons extra virgin olive oil
  • Zest of 1 medium lemon
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons balsamic vinegar
  • 1 small clove garlic, minced
  • ¼ teaspoon Vintage Merlot Salt, or to taste
  • Fresh cracked black pepper, to taste

Directions

  1. For the vinaigrette: combine all ingredients in a medium bowl and whisk together. Alternatively, you can add all ingredients to a mason jar, close the lid and shake until combined.
  2. In large bowl, toss together the vinaigrette and arugula.
  3. Arrange the dressed arugula on a large plate or serving platter. Arrange the slices of heirloom tomatoes over the arugula and place the burrata in the center of the salad.
  4. Season the tomatoes and burrata with Vintage Merlot Salt and fresh cracked black pepper.
  5. Sprinkle the basil leaves over the tomatoes and serve immediately.
