Roasted Asparagus with Snowflake Salt®, Lemon and Thyme

Asparagus compliments almost anything on the menu, and in this recipe we add tang with lemon, woodsy depth with thyme, and a salty bite with Snowflake Salt®. Harvested in small batches and available in limited quantities, Snowflake imparts a special sparkle along with its mild salinity and satisfying crunch. Warm from the oven and ready to serve as a delicious appetizer, these roasted asparagus spears pair perfectly with seafood, grilled dishes, or in a composed salad.

  • 1 pound asparagus, tough ends trimmed
  • 1 tablespoon olive oil, or more if needed, for coating
  • 2 teaspoons fresh thyme leaves
  • ¼ teaspoon Snowflake Salt
  • Fresh cracked black pepper, to taste
  • 1 medium lemon, sliced


  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or foil. Lay the trimmed asparagus spears on the baking sheet and toss with oil and thyme leaves to evenly coat. Arrange asparagus in a single layer.
  2. Sprinkle with Snowflake Salt and fresh cracked black pepper.
  3. Roast for 10-15 minutes or until tender, turning halfway through for even cooking.
  4. Finish with an additional sprinkle of Snowflake Salt, to taste, and additional fresh thyme leaves if desired. Lay slices of lemon on top before serving.
