Peanut Butter and Fusion® Vanilla Bean Salt Granola

Ingredients

3 cups old-fashioned oats (not quick oats)
½ cup flax seed
½ cup unsweetened desiccated coconut
½ teaspoon cinnamon
⅓ cup peanut butter, creamy or chunky
⅓ cup honey
1 teaspoon vanilla extract

Cooking Directions

  • Preheat oven to 300 degrees F. Line a baking sheet that has sides with parchment paper and set aside.
  • In a large bowl mix oats, flax seed, coconut, Vanilla Bean Salt, and cinnamon; set aside.
  • In a small sauce pan, cook the peanut butter and honey over low heat, stirring constantly, until soft and blended, about 2 minutes. Remove from heat and stir in vanilla.
  • Pour the peanut butter and honey mixture over the oats and stir until completely coated. Spread oats evenly on the prepared baking sheet.
  • Bake on the upper rack of the oven for 45 minutes, stirring twice during cooking. Remove from the oven and cool completely. Break apart or leave in large clusters. Store in an airtight container.
